INGREDIENTS:

8 FRESH OKRA PODS

8 CHERRY TOMATOES

4 SMALL ONIONS CUT IN HALF

4 SMALL EGGPLANT CUBED

3 TABLESPOONS OLIVE OIL

SALT & PEPPER

BAMBOO OR METAL SKEWERS

DIRECTIONS:

TOSS VEGETABLES IN OIL & SALT & PEPPER.

SOAK SKEWERS IN WATER AT LEAST 1 HOUR BEFORE GRILLING.

SKEWER VEGETABLES TO YOUR LIKING.

GRILL ON HOT GRILL FOR 3-4 MINUTES PER SIDE.

SERVE HOT WITH HERB DIP.

HERB DIP:

1 CLOVE GARLIC CHOPPED

1 SMALL ONION CHOPPED

6-8 BASIL LEAVES CUT SMALL

SALT & PEPPER

1/2 CUP MAYO

1/2 CUP SOUR CREAM

MIX ALL & REFRIGERATE UNTIL TIME TO SERVE.
