Weekend Cooking: Shrimp w/Waffles

Shrimp with Waffles

1 stick butter

2 lemons (juiced)

1 cup celery

1 cup onion

1/4 cup garlic

1 tbsp. worchestershier

1 tbsp. hot sauce

2 lb. shrimp

salt and pepper to taste

Heat butter in saute pan on medium heat, add in celery, onion, and garlic.  Cook until tender and lightly carmelized.  Add in lemon juice and shrimp.  Season with salt and pepper and continue to cook until shrimp is pink.  Add in hot sauce and worchestishier.  Stir to coat shrimp.  Layer over waffles.

Add 3 fresh tomatoes (sliced) over waffles.

Cornbread waffles-

1 cup cornmeal

1 cup flour

1 tbsp. baking powder

1 tsp. salt

1 egg

1 tbsp. sugar

Mix all ingredients into a bowl, heat waffle iron.  Ladle cornbread mixture onto iron.  Make 4 waffles.

To assemble, place the waffle on the bottom of the bowl.  Top with fresh tomato slices.  Layer shrimp over the top.  Garnish with lemon.
