La Dama West Indies Salad

  • 1 cup (1 medium) white onion, minced fine
  • 1 bunch Green Onion, Chopped
  • 1 cup Extra Virgin Olive Oil
  • 1 cup champagne vinegar
  • 1 pound jumbo lump crab meat (de-shelled)
  • 1 cup iced water
  • Salt
  • Freshly ground pepper


In a medium size bowl layer the white onion, crab then green onion and season with salt and pepper.  Then add olive oil, champagne vinegar and ice water and stir.  Chill for one hour and serve in a martini glass.
