Pan-Seared Tilapia

Pan-Seared Tilapia w/ Andouille sausage, corn & black bean salsa

1 Tilapia filet (washed, pat dry)

1/4 c. diced andouille sausage

1 roma tomato, diced

1 ear of corn, cut off cob

1/4 bell pepper, diced

1/4 c. black beans, cooked or canned

1/4  onion, diced

2 tbsp. olive oil

salt & pepper, to taste

Heat skillet w/ 1 tbsp. oil.  Salt & pepper fish filet.  When skillet is hot, add filet and cook 2 minutes per side.  Remove fish to plate.  In same skillet, add 1 tbsp. oil and sautee remaining ingredients.  Top fish w/ andouille sausage & black bean salsa.
