Weekend Cooking: Grits Cake

City Hall Diner Grit Cake

Cook grits to taste and add shredded cheddar cheese.  Spread out on sheet pan, cover and let cool overnight.

Saute long shrimp, spinach, tomatoes, and mushrooms in olive oil.  Add salt and pepper, squeeze lemon on dish, and add a touch of white wine, 1 cupe heavy cream.

Cook to taste to taste (approx. 2 minutes).

Pan fry grit cake with buttermilk flour batter.  Put in oil for 4 minutes.

You can use cakes for 3-4 days.
