3-4 chicken breasts

3 tbp. canola oil

3 green onions

1 red bell pepper, diced

3 cloves garlic, chopped

1 tomato, diced

1 onion, diced

1 c. olives, chopped

1 c. tomato juice

4-5 corn tortillas (torn)

1 lemon

salt & cumin to taste

Sautee onions, pepper, garlic, tomato, olives in oil. Add tomato juice & tortillas. Then add chicken. Finish with squeeze of lemon or lime...serve with rice.
