Filet of Beef and Potato Gratin

Dry Aged Filet of Beef recipe

Ingredients

  • 1- 8oz Filet of Chef Ben's Dry Aged Beef
  • 1- Recipe of potato gratin

1 Tbsp butter

S&P t.t.

4 oz. your favorite mushrooms

4 oz. green beans

½ shallot finely diced

Procedure

  1. Heat Pan
  2. Reheat Gratin in oven at 400 F
  3. Add oil to pan
  4. Season Beef and place in hot pan
  5. Place mushrooms in tempura batter and fry at 350 F
  6. Cook beef to desired temperature
  7. Sauté green beans with shallots and butter
  8. Season with S&P
  9. Serve

Potato gratin recipe

Serves 6-8

Ingredients

4-Potatoes- medium Idaho

1-Shallot minced

2- cloves garlic minced

1C- grated parmesan

4- eggs large

2C cream

S&P t.t.

Procedure

  • 1. Peel potatoes and slice thinly
  • 2. Crack eggs and beat
  • 3. Add eggs to cream
  • 4. Line dish with plastic wrap
  • 5. layer poatoes and season with S&P, shallots and garlic
  • 6. Sprinkle with 1/3 of cheese
  • 7. Repeat 3 times
  • 8. cover with foil and bake at 350 F for 45 minutes
  • 9. cool, remove from pan, cut and portion
  • 10. reheat for service

Can be done 2 days before if wrapped tightly and refrigerated
