Wendy Cruse: Sweet Potato and Spinach Soup

Ingredients:

2 oz diced sweet onion

12 oz diced peeled sweet potatoes

Sauté with 2T canola for 10 minutes on medium heat.

8 oz diced firm tofu

8 oz sliced snow peas

8 oz chopped fresh spinach

Stir

Add

2T coriander

1t cumin

1t salt

1t black pepper

1 11 oz can coconut water

1 14 oz can coconut milk

8 oz vegetable stock

Bring to simmer for 5 minutes and add

1/2 fine diced jalapeño

1/2 bunch chopped cilantro

Juice of 1/2 a lime
